Nerikiri is Japanese confectionary, which is most commonly served in tea ceremony.

It is made from white beans paste and Gyuhi (one type of Mochi – made from glutinous rice powder)

In this lesson, we make dough from the scratch and do shaping. September is the month for chrysanthemums, therefore, we make several motif of chrysanthemums using special wagashi tool called Sankaku-bou.
