Wagashi lesson in April

After cherry blossoms, new season begins. Enjoy new new green. Yomogi (mugwort) is traditional spring herbs for making Mochi.

If you are interested in making, spring sweets, please contact me. English class is available upon request. min 2 people (max 5).

What to make :

– Yomogi mochi : Distinctive herb flavor. Red beans inside

– Kashiwa mochi : Tradironal sweets for Tango no sekku (5 May). the children’s day.

Toraya Kobo Gotenba

Really wanted to visit this place for long time.
Finally, TORAYA KOBO at Gotenba, 2 hours drive from Tokyo where you can see beautiful Fuji mountain.

Very quiet on weekday, but I heard that you need to wait a few hours on weekends.

Plum tree

Good thing about Wagashi is that I can feel season and express its beauty.

Beautiful plum tree around my neighbor.

So, we made plum tree with Nerikiri confectionery in the lesson this month.
Also, we made Uguisu Mochi, which express Japanese nightingale, supposed to be the bird in spring,.

Homeparty – Japanese local food

Request from German friend.
‘Want to learn Japanese local food and impress 20 guests coming to home my party’

So we cooked together. Japanese popular home dishes, Tatsutaage (Fried chicken soy sauce flavor). Aubergine Dengaku (sweet miso) and colorful Onigiri (rice ball).

Miso making workshop

Lesson report : Miso making workshop in English and Japanese.

Miso is our soul food for Japanese. It is special to have home made miso.

Let’s make!

Basically, 3 important ingredients, good quality of  soy beans, Koji and salt.

It is much fun to make miso together.

Mix well salt and koji, then with cooked very soft, soy beans.

Throwing miso ball to remove the air is most fun part. Everybody got excited.

After making miso, we did several Miso tasting with Onigiri rice balls and special miso soup.

Be patient till autumn. Miso is required to ferment at least 6 months. Winter is the best timing to make miso, it will start ferment gradually. Then after summer, your miso is ready, Good luck!

Wagashi &Coffee

At Mayuka’s Ikeru special event, Wagashi collaboration with Viva coffee.

I love Viva coffee and always wanted to do this collaboration.
Wagashi goes very well with coffee, not only with Japanese tea.
Coffee is beans, wagashi is also made with red beans, why not?

Specially, people love walnut & fig Yokan.

I had a great time spending with Ikeru members, lovely people.

Wagashi lesson in March

Cherry blossom season is coming soon, in Japan , we enjoy ‘Sakura(= cherry blossom) mochi’ while enjoying the sakura view.

It is a distinctive flavor of  salted Sakura leaves. Anko (Red beans paste) is wrapped with sticky rice mochi (Doumyouji ) and sakura leaves.

Green tea Swiss roll

Guests from Mexico. Special request ‘Want to learn how to make Matcha cake’

So, we made Matcha Swiss roll with double cream& white bean paste.
She owns bakery back home in Mexico. Wow, nice to have matcha cake there!

Homemade Miso workshop

Do you like Miso soup ? If you live in Japan, why not making your own miso, fermenting at home.  Homemade miso is very special.

 

Date:

14 February (Thu) 10am for English class.

You can request private class from 3 people (max 6).

 

In a class:

We make miso together. Bring home your miso and let it ferment another 6 months. Your miso will be ready in autumn. After the class, we make Miso soup with Pork (Butajiru) and do several miso tasting with Onigiri for light lunch.

 

Price : 5,000 yen per person

Brown sugar steam bun

 

In January class, we made steam bun called ‘Kokutou Manjyu” (or RIkyu manjyu).
Kokuto meams brown sugar, good quality brown sugar from Okinawa.

It is not easy to wrap red bean paste with soft dough out side, but everybody managed to make it.

After steam the bun, we made a mark with a hot iron. It is exciting.
